  YUCATECAN OR YUCATAN CUISINE
 
 

Yucatecan or Yucatan cuisine is distinct from any other because of its exclusive combination of European, Mexican, and Spanish influence. It also provides a hint of Arab and Caribbean flavors. In result, the most delectable, exquisite and mouthwatering dishes on this side of Mexico is found in the Yucatan peninsula. Geographic factors like several mountains and jungles had once kept the peninsula isolated. However, its ports provided cultural and commercial trading with other countries. The general distinction of Yucatecan cuisine is the spices used in its dishes which are not usually found in other cuisine. Some of these spices include oregano, lime, sour orange, pumpkin seed powder, sweet pepper, red onions, Habanero pepper, and achiote or annatto.

Visitors from all around the world often commend Yucatan with its delightful array of dishes. Some of the most popular dishes are as follows:

Pollo Pibil  

Pollo pibil

A delicious dish made from chicken marinated in achiote or annatto, sour orange sauce, and other spices and then baked wrapped in banana leaves. A pork version of this dish, conchinita pibil, is also quite popular. This dish is perfect to have for dinner or lunch.

Lime Soup  

Lime Soup

This highly enjoyable soup is made of bits of shredded chicken or turkey, fried tortilla and lime juice. It can be dressed with tomato sauce, coriander leaves, pepper and some shredded tostadas.

Queso Relleno  

Queso Relleno

Queso Relleno is a term for stuffed Edam cheese of ground pork, raisins, tomatoes, olives, and capers. It is usually served in red sauce. Chile Relleno is a Poblano chili version of this dish.

Poc Chuc  

Poc Chuc

Poc chuc is composed of sliced pork topped with pickled onions, spiced tomato sauce and marinated in sour orange juice. Can be eaten with refried beans as well and better if you eat it with hand-made tortillas.

Panucho, Salbut, Kibi, Codzito  

Panuchos and Salbutes

This dish is made up of shredded chicken or turkey, red onions, and lettuce atop with refried beans in between layers of handmade cooked tortilla. It is served with xnipec salsa which is made of tomatoes, sour orange juice, salt, and Habanero peppers or a pumpkin seed sauce or any other sweet sauce. The Salbutes are like the Panuchos but without the refried beans.

This gratifying breakfast dish is made of tortilla topped with refried beans, fried eggs, and then smothered with diced ham, peas, shredded cheese, and tomato sauce

Papatzules  

Papadzules

Papadzules is made of chopped hardboiled eggs rolled or wrapped in a corn tortilla, covered with or soaked in pumpkin seed sauce and then topped with tomato sauce and Habanero peppers.

Tikin Xic  

Pescado Tikinxic

This is a fish dish marinated in achiote, then wrapped in banana leaves and charbroiled. It is served with a delectable tomato and Habanero pepper sauce.

Although not considered dishes but beverages, these recipes are an important part of the Yucatecan cuisine.

Michelada  

Michelada

Michelada literally means “my cold beer”. It is a concoction of (preferably) dark Mexican beer, lime, and spicy peppery seasoning: coarse salt, Worcestershire sauce, soy sauce, Tabasco sauce, black pepper, Maggi seasoning.

Chelada

Chilada is a version of michelada without the spicy seasoning. It’s just beer, lime, and coarse salt.

Xtabentun  

Xtabentun

This is made from the xtabentun flower’s honey, anise seed, and rum. It is considered more of an appetizer than a beverage.

Yucatecan cuisine truly offers a variety of flavors incorporated from the different cuisine which had influenced it. You will surely experience a kaleidoscope of flavors as you try out the dishes from the beautiful Yucatan peninsula.
